Easy Homemade Mayo & Spicy Mayo Recipe

Mayo - no sandwich or lonely plate of fries would be complete without it. But whoever thought to eat a raw egg and a bunch of oil at once probably lost a bet.

I don't use mayo very often, but this is a great trick to keep on hand. It's perfect for squeezing out over a salad or poke bowl, making a fish salad out of, or just dipping fries into. Once you make this easy mayo recipe yourself, you'll never buy it from the store again. Fresh mayo has a creamier texture and more pleasant zest than retail brands, plus you know exactly what's in it!
Mustard is a necessary emulsion helper, meaning it helps turn the oil into that smooth, silky sauce, so don't skip it. You can play with the flavour of mayo by switching up the flavour of mustard, and/or adding more.
I use a smoothie blender which involves taking the cap off for each step and making a bit of a mess. I have seen this process used with food processors, but my food processor is too large, and the blade doesn't have enough contact with the mixture at the beginning and always breaks the emulsion. An immersion blender can work as well, as long as your mixing container fits snugly to avoid the same problem as above.
Always add less oil than you think per step, as it's very tedious to try to recover a broken emulsion or to start over. Keep in mind that this is raw egg, so toss any leftovers by day 7.
For storage, I've found these sauce bottles work best. The included funnel is a little narrow for mayo so I end up spooning it in, but the bottle squeezes well without being too flimsy.
Ingredients
1 whole egg
1 tsp mustard, plain or fancy
1 tsp salt
1 cup light oil
1 lime or lemon
1 tsp homemade sambal oelek (optional for spicy mayo)
Directions
Add everything except the oil to a small blender and pulse to combine.
Add roughly 1 tbsp of your oil to the mixture, and blend.
Slowly keep adding oil, 1-2 tbsp at a time, while mixing thoroughly in between.
For spicy mayo, or any other flavour, add your sambal or other sauce and blend.
