Nothing beats homemade mac & cheese for comfort food, and mixing in some well-seasoned lobster will make you feel like mac and cheese royalty.

Growing up with processed mac & cheese out of a box, I never considered mac and cheese a high-level culinary dish. After trying a few different variations at restaurants, I learned that this go-to comfort food has a lot of room for elevation. This version of a lobster mac & cheese recipe punches up with a bit of heat from our homemade sambal oelek for the gift that keeps on giving.
A high-calorie option, this is a great meal to pack on weight for training or to get you through a gross cold winter week. If you're looking for some meals to get you ready for your summer beach body, check out or low calorie tags instead!
Ingredients
4 tbsp butter
4 tbsp flour
4 cups milk, room-temperature
600g lobster
1 tsp homemade sambal oelek/chili paste
2 tsp salt, divided
1 tsp pepper
6 cloves of garlic
2 tbsp olive oil
680g macaroni (two packages)
350g aged white cheddar
450g mild gouda
1 cup large bread crumbs, or two pieces of crumbled toast
Directions
Start with making your roux. In a large pot, melt your butter and add in your flour and mix until you have a paste.
Brown your roux to light caramel, about 5 minutes, while stirring - then add a small amount of room-temperature milk and stir in until thick. Continue adding small amounts of milk and stirring until the milk is gone.
Add your cheese in small amounts and fold until completely melted.
Season with half of your salt, half of your garlic, and some homemade sambal oelek to taste.
Heat a large pan and add your olive oil.
Toss in your remaining garlic and sauté, then add your lobster meat.
Season with remaining salt and pepper, and sauté until cooked and lightly braised.
Note - If cooking from frozen, the lobster can release a lot of water and will overcook before it develops any colour - just sauté until it smells delicious.
Add to your cheese sauce and stir thoroughly.
Preheat your oven to 375F
Boil your macaroni, drain, and add to a large baking dish.
Stir in your cheese sauce, and top with breadcrumbs. Toss in the oven until crumbs start to darken and cheese starts to crust, about 20 minutes.
