Adasi Potato Lentil Soup

Adasi is a Persian soup or stew (debate in the comments) made of potatoes, lentils, and some earthy aromatic spices. It's my favourite hearty comfort soup aside from my easy chicken soup - it's a great source of protein and fiber and hits that junk food craving without being high in fat.

This recipe takes less than an hour from set-up to serve, and the leftovers can stay in the fridge for up to a week - it's the perfect meal prep soup for cold winter days. Everybody needs this potato lentil soup recipe in their repertoire.


I season mine with dried fenugreek leaves, but feel free to top with cilantro leaves or sautéed onions instead. The squirt of lemon or lime is non-negotiable, though.


As with any soup that calls for a chicken broth, the quality of broth with greatly affect the quality of the final soup. I strongly suggest trying to make your own chicken stock to elevate your soup game, try it at least once.


Ingredients


  • 4 cloves of garlic

  • 1 large onion

  • 2 large potatoes

  • 2 cups green lentils

  • 2 tbsp ghee or clarified butter

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp cardamom

  • 1 tsp turmeric

  • 8 cups homemade chicken stock

  • Fenugreek or Cilantro leaves - optional

  • 1 Lemon or Lime - optional


Directions


  • Mince and dice garlic, onions, and potatoes into small pieces. We aren't blending, so keep it small.

  • Melt your ghee in a large pot and add your onions and garlic, stirring until soft and gold in colour - about 5 minutes.

  • Add your spices and mix thoroughly.

  • Add potatoes and mix thoroughly.

  • Optional step - keep potatoes on medium heat for about 10 minutes, stirring occasionally, to brown the edges for extra flavour and texture.

  • Rinse and add your lentils and chicken stock. Bring to a boil and turn the heat to medium-low, stirring occasionally until the lentils are cooked and the potatoes are soft, about 30 minutes.

  • Serve and garnish with a pinch of dried cilantro or fenugreek leaves, and a squirt of lemon or lime juice.
