A shrimp alternative to a classic tuna soup, my encebollado is a spicy and hearty bisque and perfect for any occasion.
We encountered this Ecuadorian specialty during a cooking class, and I've made a few adjustments for the home meal prepper. I also swapped out the tuna for shrimp, as bulk tuna isn't as widely available in my local freezer section.
